Nicaraguan Buñuelos: «Yuca Fritters»

If the most consumed and richest Nicaraguan desserts are the buñuelos, many of us love a weekend, for example.

A little bit of history…

The origin of this dessert is unknown, but probably as well as the other sweets known in Latin America, have Arab origins, taken to Spain, these were taken to this country in the Muslim period and then were taken to «America», in the middle of the conquest therefore, it is likely that this delicacy is due to the boat that came with Columbus.

Unlike other countries that makes the recipe of fritter with fried flour and honey. In Nicaragua we make it based on yucca with cheese and honey.

Ingredients:

  • 2 pounds of cassava
  • 1/2 pound brown sugar
  • 1 pound dry cheese
  • 1/2 liter of oil
  • 1 tablespoon baking powder
  • Cinnamon

Some tips:

  • Do not use frozen yucca
  • It proves the cheese doesn’t crumble too fast.
  • It also proves that the cheese is not salty, it must be at its peak.

Preparation:

  1. We wash the yucca and peel it, then we split it to grate it together with the cheese.
  2. Then add the baking powder and let it rest for about 10 to 12 minutes.
  3. Once the time has passed we begin to form our little balls.
  4. We light our fire and add oil to our casserole and when it is very hot we fry them. The idea is that the balls are submerged so that the crust is fried to perfection.
  5. Once they are golden brown, take out with a spoon, drain the oil and then serve.

How do you make honey for fritters buñuelos?

  • Simple! Take a pot, add half a liter of water, half a pound of sugar and a little cinnamon, here you can do it to taste.
  • Then we put to boil until we see that all our seasoning is thick, once we notice this effect we remove it from the kitchen so that our honey does not crystallize and we add 3 to 4 drops of lemon.And that’s it!
