Atolillo recipe (Simple Custard)

Atolillo Nicaraguense

Ingredients

  • 1⁄4 cup of rice,
  • 1 cup of water
  • 1 litre of milk
  • 1⁄4 cup of sugar
  • cinnamon slices to taste
  • 1 teaspoon, vanilla
  • White rum (optional)

Preparation

  1. Soak the rice in the water for 30 minutes. Then blend for a minute and a half and strain.
  2. In a pot, pour the milk, add the sugar and cinnamon, put on a moderate heat and do not let it boil until it reduces by half, add the rice and vanilla and continue stirring until it reaches the desired thickness.
  3. Pour immediately into a suitable container, cool and refrigerate if preferred. Serve decorating as desired.
  4. The process takes between 45 and 50 minutes.
